There are lots of things that happen behind the scenes at a function. Some we talk about and some we would rather just forget. But in our case, we service our guests so much better because of our guys behind the scenes. Besides loading, packing, unloading, packing again and keeping everything organized, they adapt and rise to whatever challenge comes their way. Like the wedding this weekend whose tent was just a little bit smaller than we would have liked. With the threat of rain and a buffet line outside the tent, our guys came to the rescue and put up a tent at the last minute to save the day (and the buffet). Without Freddy and his guys, believe me the wonderful food and fantastic service just would not happen nearly as easily. So Freddy, Rocky and the guys…MAHALO!

Salt and PepperWhen you are preparing world class cuisine at far away places like an open field or remote beach it’s important to organize and plan, check and double check and label your products. After all, you don’t want to be preparing seared scallops with sea salt in someone’s garage and end up with caramelized sugar instead! So our chef’s are very careful to lable everything!

Looks like a big wedding and anniversary weekend for us!  Let’s see - a 40th wedding anniversary, a very large wedding for some local residents and a very small wedding for some foreign visitors.  That’s variety - that’s what we like!

We just did a party at a beautiful home and everything was over the top. 
The sushi display that Debra came up with was really nice.
Since it was a repeat client we had to try some new pupus.
The deconstructed scallop cake was amazing!

Ever seen the vodka in your freezer solidify ?  Well we did!  But it had to do with dry ice, lighted boxes, vodka, martinis and mai tais and a creative catering team.  Can’t tell you too much here - you have to do an event with Paradise Gourmet and Experience it yourself!  OK - click here for some ideas or here!

Welcome

Welcome to our new website.  While we normally are spending time creating exciting proposals for our clients and new preparations for fresh Mahi Mahi, these last few weeks we have been working on this site.  Jean in our office really took on the project and did a great job learning how to build a website.  We decided we wanted to have more control of the site so we can keep it updated and current right within our office.

So while its not complete yet, we are almost there.  Watch for new information, pictures and yes, that new preparation of Kobe Beef or a new cocktail recipe.
